- 4 cups cubed watermelon (seedless preferred)
- 1 cup crumbled feta cheese (sheep’s or cow’s milk)
- 1/2 cup packed fresh mint leaves
- 2 large limes (for juice and zest)
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
Instructions
- Wash the watermelon, cut off the rind, and cut the flesh into 1-inch cubes.
- Place the watermelon cubes in a colander for 5 minutes to drain excess water, then pat dry with a paper towel.
- Crumble the block of feta cheese into large chunks by hand.
- Rinse and dry the mint leaves, then tear them into rough pieces by hand.
- In a small jar or bowl, whisk together the lime juice, olive oil, lime zest, salt, and pepper to create the dressing.
- In a large mixing bowl, combine the watermelon cubes, crumbled feta, and torn mint.
- Pour the dressing over the ingredients and gently toss using tongs or a large spoon to coat without mashing the melon.
- Let the salad sit for 5 minutes before serving to allow the salt to enhance the flavors.
Notes
Do not use pre-crumbled feta as it is coated in potato starch and lacks flavor. Always pat the watermelon dry to prevent a soggy salad. For best flavor, toss the salad 5-10 minutes before serving to allow the salt to penetrate the melon. This salad does not store well; serve fresh within 2 hours.
