Ingredients

  • 4 cups cubed watermelon (seedless preferred)
  • 1 cup crumbled feta cheese (sheep’s or cow’s milk)
  • 1/2 cup packed fresh mint leaves
  • 2 large limes (for juice and zest)
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash the watermelon, cut off the rind, and cut the flesh into 1-inch cubes.
  2. Place the watermelon cubes in a colander for 5 minutes to drain excess water, then pat dry with a paper towel.
  3. Crumble the block of feta cheese into large chunks by hand.
  4. Rinse and dry the mint leaves, then tear them into rough pieces by hand.
  5. In a small jar or bowl, whisk together the lime juice, olive oil, lime zest, salt, and pepper to create the dressing.
  6. In a large mixing bowl, combine the watermelon cubes, crumbled feta, and torn mint.
  7. Pour the dressing over the ingredients and gently toss using tongs or a large spoon to coat without mashing the melon.
  8. Let the salad sit for 5 minutes before serving to allow the salt to enhance the flavors.

Notes

Do not use pre-crumbled feta as it is coated in potato starch and lacks flavor. Always pat the watermelon dry to prevent a soggy salad. For best flavor, toss the salad 5-10 minutes before serving to allow the salt to penetrate the melon. This salad does not store well; serve fresh within 2 hours.
