Description
A vibrant, naturally sweet, and refreshing summer drink made with fresh watermelon, mint, and lime. This 5-minute slushie is the perfect cooling treat for hot days, requiring zero cooking and minimal prep.
Ingredients
- 4 cups watermelon flesh (about 900g), cubed
- 1 cup fresh mint leaves, packed (about 30g)
- 2 tablespoons fresh lime juice
- 1–2 cups ice
- 1–2 tablespoons honey or agave (optional, to taste)
- A tiny pinch of salt
- 2–3 ounces vodka or white rum (optional, for adult version)
Instructions
- Prep the watermelon: Cut the watermelon in half and scoop out the flesh, discarding rind and seeds. You need about 4 cups of cubed flesh. For best texture, freeze the cubes on a baking sheet for 2 hours prior to blending.
- Prep the mint: Rinse mint leaves, pat dry, and remove from stems. Tear large leaves in half to help them blend evenly.
- Blend the base: Add watermelon cubes, mint leaves, lime juice, and honey (if using) to a high-speed blender. Pulse to chop, then blend on high for 30-60 seconds until smooth and liquid.
- Add ice: Add 1 cup of ice to the blender. Blend on high until the mixture reaches a slushy, soft-serve ice cream consistency. Add more ice if too thin, or a splash of water if too thick.
- Taste and adjust: Taste the slushie. Add more honey for sweetness, lime for tartness, or a pinch of salt to enhance flavor. Adjust to preference.
- Serve: Pour into tall glasses. Garnish with a sprig of mint and a slice of watermelon. For the adult version, add vodka or rum to the glass before pouring the slushie, or blend it in.
Notes
For the best texture, freeze the watermelon cubes beforehand to eliminate the need for extra ice, which can dilute the flavor. Fresh mint is essential; dried mint will not provide the same aromatic quality. If using a weaker blender, strain the slushie through a fine-mesh sieve for a smoother texture. This recipe is naturally gluten-free and vegan (substitute honey with agave/maple syrup).
