  • 2 tablespoons unsalted butter, melted

  • 34 tablespoons honey (for drizzle)
  • Pinch of flaky sea salt (for drizzle)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the long sides, and lightly grease the parchment.
  2. Toast the walnuts in a dry skillet over medium heat for 3-4 minutes or in the oven for 5-7 minutes until fragrant. Let cool completely, then chop roughly.
  3. Add the pitted Medjool dates to a food processor and pulse until they break down into a coarse meal. Run continuously until a smooth, sticky paste forms. If dry, add a teaspoon of water at a time.
  4. Add the chopped walnuts, melted butter, and vanilla extract to the date paste. Pulse a few times to combine, ensuring distinct walnut pieces remain.
  5. Transfer the mixture to the prepared pan. Press firmly and evenly into the pan using your hands or the back of a spoon to ensure the bars hold together.
  6. Bake for 20-25 minutes until the edges are golden brown and the center feels set but slightly soft.
  7. Remove from oven and let cool in the pan for 15 minutes. Meanwhile, warm the honey in the microwave for 15-20 seconds until runny.
  8. Drizzle the warm honey over the warm bars in a zigzag pattern and sprinkle with a pinch of flaky sea salt.
  9. Let the bars cool completely in the pan (at least 30 minutes) to set. Lift out using the parchment overhang, place on a cutting board, and slice into 12-16 squares.

Notes

Use Medjool dates for best texture; regular dates may require soaking. Toasting walnuts enhances flavor. Press the mixture firmly into the pan to prevent crumbling. Cool completely before cutting for clean slices. Store in the fridge for up to 1 week or freeze for up to 3 months.
