Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. Wash, peel, core, and slice apples into ½-inch thick wedges.
  3. In a large bowl, toss apple slices with lemon juice, granulated sugar, 1 teaspoon cinnamon, and vanilla extract until evenly coated.
  4. Spread the apple mixture evenly into the prepared baking dish.
  5. In a medium bowl, whisk together rolled oats, all-purpose flour, brown sugar, 1 teaspoon cinnamon, nutmeg, and salt.
  6. Add the cold, cubed butter to the dry ingredients. Use your fingers to rub the butter into the mixture until it resembles coarse crumbs with some pea-sized clumps.
  7. Spread the topping evenly over the apples. Do not press it down.
  8. Bake for 35-40 minutes, or until the topping is golden brown and the apples are bubbling around the edges. If the topping browns too quickly, cover loosely with foil for the last 10 minutes.
  9. Remove from oven and let cool for at least 15 minutes before serving to allow juices to thicken.
